Happy Birthday Uncle Norm!

This is an overdue post. Uncle Norman & Suzanne are such good friends of mine. They are always looking out for me. Making sure I'm ok, always there when we need a friend to confide in and ohhhh.... they are so much F.U.N. too! From customers to friends.... Uncle Norm used to visit our shop for fresh juices but back then, I'm scared of him because he always appear very serious - the no nonsense kinda guy. But I was so so so wrong. He's just exactly the opposite :P

His birthday was on 010108 but I was too busy I did not have time to bake for him. Just before I left for a short trip to Angkor Wat, me & hubs managed to have dinner with him & suzanne..

:) I made him coffee & choc banana with choc & strawberry topping :)

Tropical Cupcakes

My latest order is from a customer who likes the tropical cupcakes design I did previously. But 24pcs instead of 12pcs like the previous one... I added an additional umbrella for this one to bring out the tropical feel and also to enhance the colour!

While I was away......

Just before I left, I baked some cupcakes to sell @ Manila Place.

Choc-o-mallows: Choc cake filled with white chocs, topped with chocolate buttercream & marshmallows

Berry-Strawbery: Vanilla cake filled with strawberries & biscuits soaked in strawberry syrup topped with strawberry buttercream & fresh strawberries!

Tasty-Coconut: Vanilla cake filled with coconut soaked in gula melaka & topped with pandan buttercream with dessicated coconut

Orange-n-Lemon: Vanilla cake filled with biscuits soaked in fresh orange & lemon juce topped with orange buttercream & mandarin oranges

Choc-o-Banana: Chocolate cake filled with fresh bananas topped with choc whipped cream & choc rice

Cookies-n-cream: Chocolate cake filled with oreos biscuit and topped with chocolate buttercream & oreos biscuit

Addictive-Coffee: Coffee cake filled with biscuits soaked in espresso topped with coffee cream, cocoa powder & coffee bean

Mixed-Fruits: Vanilla cake filled with raisins & mixed fruits topped with vanilla buttercream & currants

Crazy-choco: Chocolate cake filled with chocolate chips topped with chocolate buttercream & chocolate rice

Nutty-Peanut Butter: Choc cake filled with crunchy peanut butter topped with peanut buttercream and crushed nuts

It definitely gave our cake chiller a different feel! However, this is not something that will be for long term. We will still be selling our usual cakes from La Manila. Our lorry broke down causing us to be out of cake for about a week! So, the cupcakes is just to fill up the cake chiller in the mean time. Temporary only. Cakes will arrive again tomorrow... :)

I'm back!

I'm back from a short trip to visit one of the "7th Wonder of the World" - Angkor Wat. It was such an eye-opening experience for me. Siem Reap on the whole has really touched me. Its history (the good, bad & ugly), how the people are impacted by their past and how they are living it today, makes me feel very fortunate. For those who loves history, photography & architecture (I'm no history buff tho'), this is a must visit!

PS: Lots of walking, climbing & more walking under the hot sun!

My passion for baking seriously began only mid of last year. There are just so many things to learn about baking and this year, that will be my biggest mission - "To deepen this new interest of mine as much as possible."

So basically, my plans this year are mostly related to baking :)

Firstly, I want to be able to come with specific designs & flavors for my cupcakes. This is to make it easier for all of you to choose. But I will still want to be challenged by Y.O.U. to design something new... And of course with Chinese New Year & Valentine's Day just a month away... lots of thinking to do...

Secondly, I really wanna attend more short term courses to develop this passion of mine. Of course, ideally I'd wanna go Le Cordon Bleu but for the time being... There's just so much to learn! Compared to the lectures and classes I've attended for my past 16 years, pattisserie classes are so much fun! All the hands on work & demonstration are just so much fun. It's definitely more tiring but oh-so-worth-it!

Thirdly, I hope to be able to travel a bit more to gain more exposure! And to be able to taste more cupcakes all around! I've never heard of cupcakes till mid last year but ever since discovering it... my goodness! The amount of cupcake bakers around the world is just overwhelming.... There are so many great bakers whose work I admire and find motivation from. It's quite unbelievable what they can do from icings and fondants. A-M-A-Z-I-N-G!
